All you need to do is combine the dry ingredients in a mug, then mix in the wet ingredients until you have a smooth batter. You can choose to fold in additional chocolate chips here, or my current favorite is cacao nibs! So yummy . I use it all the time. I think it’s great you are continuing to eat healthy even at college. I’m totally going to try this. That sounds awesome! Vegan, gluten-free, and with a nut-free option, suitable for a variety of lifestyles! And we don’t want that, do we? This is one of her favorite treats (the other is a gluten-free cookie recipe that I’ll have to share another time). I dare you, tell someone you had chocolate cake for breakfast (plus frosting), tell a friend who is trying to lose weight, and watch their eyes go wide. Which happens all the time , I was so nervous making this the first time because I had no idea how long to microwave it for. This gooey chocolate mug cake for one is studded with chocolate chips, made with pantry-staple ingredients and takes just seconds to cook in the microwave. (Comfort foods don’t have to be unhealthy!). Earthy, yummy– love that it’s the only flour you used! Since I’m living in a vegan co-op this year, I have access to a full kitchen (which is wonderful). You only need to dirty one dish (and a spoon/fork), and you can have your own personal serving of chocolate cake in under 5 minutes! You could also make it for dessert too. I LOVE coconut flour for the fluffiness it adds to baked goods. I need all the comfort I can get right now. Top the cooked mug cake with the frosting and top with optional mini chocolate chips and sprinkles. The total cooking time will depend on the wattage of your microwave. i am going to have to give this a try! Mmm! I remember the first day I got a craving for chocolate cake a couple of months back. You can use chocolate chunks, chips, buttons, as long as it’s CHOCOLATE…because no way we can have a Double Chocolate Mug Cake without chocolate, right? Shari. You can always cook longer, but never go back after it’s overcooked! I love this recipe, though I’d probably have to multiply the ingredients x6… Thanks for sharing it at Savoring Saturdays, Rebecca! . Ooooh, this recipe sounds so yummy. Buckwheat. My go to food in college is oatmeal. I love that you made it vegan too. Ramekins are just prettier and work just as well. I first made this cake a few weeks before I left home and then I made it again on my last morning at home. I didn’t have the time or desire to whip up an entire chocolate cake from scratch, but my craving needed to be satisfied! A few squares of chocolate or a handful of chocolate chips is usually enough to get the job done, but that one day I was craving more than just chocolate: I was craving rich, fudgy chocolate cake. I wanted it to cook and be cake (not mush), but I also didn’t want it to blow-up and overflow. I seriously was missing out on one grand food experience, haha! Right!? Yum! My powder comes out weird! Plus this cake has the addition of omega 3s from the flax egg used. If not, you’ll end up with clumps of dry flour at the bottom…ew! yum!!
